Strawberry Poppyseed Salad

 

This is a simple and highly attractive salad that mixes the sweet strawberries and the sharper dressing together very nicely indeed. The poppyseed gives it an extra edge, and altogether it is a nicely complex mix of flavours. Mustard seeds, by the way, make an interesting alternative.

 

Ingredients

 

  • 1 head romaine lettuce
  • 1 punnet strawberries
  • 1/2 red onion

 

Dressing

  • 150ml mayonnaise
  • 2 tbsp raspberry vinegar
  • 100g sugar
  • 75ml whole milk
  • 2 tbsp poppy seeds

 

Wash lettuce and dry thoroughly. Hull, then slice the strawberries and peel and slice the onion into thin rings. Combine the dressing ingredients in a blender, and blend thoroughly, then place the strawberries in the centre of the lettuce leaves in a salad bowl, cover with the onion rings and then pour over the dressing.
