A fabby garnish. You’ll need a good baking sheet lined with silicon paper or a flexible Teflon baking sheet.
In a roomy bowl, beat the egg white to soft peaks and then whisk in the sugar, whisking until the mixture forms hard peaks. Using a teaspoon, dot the baking sheet with mixture, lifting the spoon to form little blobs with curly tops, a little like tiny pot stills. Bake in the oven, set to the lowest possible heat and with the door open, for 30 minutes. Keep a careful eye out to make sure they don’t brown.
Serve as a garnish or, sandwiched together with cream, as an accompaniment to coffee.
