This is a barbecue salad if ever there were one, but its gently spiced flavour is ideal for all sorts of salad events.
Boil a pan of lightly salted water, and add the potatoes. Boil these over a medium heat for 12-15 minutes until just under cooked and still firm in the centre. Drain and rinse with cold water then drain again. Chop the apple and add this to the potato. Drizzle the vinaigrette over the potato and apple, and mix them together with a light touch to avoid breaking the potato pieces. Add the other ingredients, and mix these in well. Leave in the fridge for a couple of hours for the flavours to blend before serving.
