These are meant to be icy rather than smooth, shavings of flavoured ice piled up in the serving glass. It’s worth giving them a single stir as they freeze, about 2 hours into freezing, just to stop the mixture settling out - but if you want to create a more sorbet-like finish, then stir them more frequently as they freeze and, after about an hour of freezing, fold a whipped egg white into the freezing mixture.
