Ginger Lemon Cooler

 

When you live somewhere as hot as I do, you'll appreciate a long, cooling drink like this and nick the recipe from the café that serves it. If you're a real sneak, you'll change the name by a word or so.

 

Ingredients

  • 6cm piece fresh ginger, grated
  • 4 tbsp caster sugar, heaped
  • 4 Lemons, zest and juice
  • 350ml water
  • Soda water
  • Fresh mint

 

Steep the ginger and the lemon zest in 150ml of boiling water, adding the sugar as it cools and stirring it in. Add the remaining water and the lemon juice and strain when cooled. Serve a half glass, topped up with a half glass of soda, ice and fresh mint.
