Arabs on horseback

Serves a good 8

Angels on horseback is bacon wrapped around oysters and devils on horseback is bacon wrapped around prunes. Having invented wrapping bacon around dates one Christmas, we decided to call 'em Arabs on Horseback. And it's by far the best of the three. If you can get dates stuffed with almonds, do: they soak up all the fat from the bacon and are simply amazing. If you can't then consider the idea of stuffing them yourself. Honest, it's worth it...

Ingredients

  • 40 dates, almond stuffed
  • 400g streaky smoked bacon
  • Cocktail sticks

Cut each rasher of the streaky bacon in two, removing any gristle first, then thin these out on a chopping board with the back of a knife. Wrap the bacon around the almond stuffed dates, securing it across the meaty strips with a cocktail stick. Place on a baking sheet in a preheated 400F, gas mark 6 oven for 20 or so minutes until the bacon has browned and crisped a little (but not gone to cardboard). Leave to cool and then remove carefully from the baking sheet using a spatula onto kitchen towel and then arrange ready to serve.
